Between high school and college, I spent a year living in France as an exchange student. As you can imagine, the cuisine I got to experience there was one of my favorite parts of the whole experience. Cheese is considered an important part of most meals, and often my host families would have spreadable cheese instead of butter on bread–often eaten as dessert or as the final course of a meal. This is how I was introduced to Laughing Cow spreadable cheese, though in France it’s called “la vache qui rit” (literally “the cow who laughs”). If you’ve never tried it, it’s delicious.
Laughing Cow spreadable cheese comes in a light form, which is incredibly low calorie for how great it is. I often use it in place of mayo in various dishes. Given the high caloric load of avocado, I thought a great way to make avocado spread on toast might be to combine it with some Laughing Cow. I was right. It’s fabulous. If you’re a fan of avocado toast (who isn’t, right now?) I suggest you give this a shot. It adds a nice cheesy creaminess to the avocado spread. I don’t think I can go back to just eating plain avocado toast after trying this–it’s that good!
Avocado and Cheese Mini Bagel

- 1 whole wheat mini bagel
- 1-1/2 oz. (3 Tbsp) avocado
- 1 Laughing Cow creamy swiss light cheese wedge
Combine avocado and cheese wedge in bowl. Mash with fork until pureed and mixed together.
Spread avocado mixture on toasted bagel halves.
Serve topped with fresh cracked black pepper and kosher salt.
