Mini S’mores

S’mores rank among my favorite desserts. I love all the memories they conjure up–having bonfires with friends in high school, having fires in our condo’s fireplace in the winter with my husband, and many more. It was my husband who truly taught me how to perfect the s’more. The key is to melt the chocolate a bit before sandwiching everything together.

I recently was craving s’mores, and I realized that if you just downsize them they’re really not very caloric–less than 100 calories per s’more if you use this recipe. You can also easily make them in the oven. Mini s’mores have become one of my favorite desserts just because they’re so easy to make and so low-calorie–not to mention delicious.

Mini S’mores

Servings: 4 · Serving Size: 1 S’more · Calories: 68
Fat: 2 g · Cholesterol: 1 mg · Sodium: 53 mg · Carbs: 13 g · Fiber: 0 g · Sugar: 8 g · Protein: 1 g

  • 2 sheets graham crackers
  • 4 marshmallows
  • 4 pieces Hershey’s chocolate bar

Directions
Set your oven to broil.

Break the graham crackers into small rectangles. Place four pieces face down on a parchment-lined baking sheet.

Cut the marshmallows in half and place two halves on top of each graham cracker piece.

Put the baking sheet with the marshmallow graham crackers into oven for 1 – 3 minutes. Keep a close eye on them. Remove from the oven when the marshmallows have puffed up and turned golden brown.

While the marshmallows toast, break the chocolate into small rectangles. Place one piece of chocolate on top of each remaining graham cracker piece.

When the marshmallows are just done, remove them from oven and add the chocolate graham cracker pieces to the baking sheet. Place the sheet back in the oven for approximately 30 seconds, or until the chocolate just starts to look shiny and melted.

Remove from oven and press the chocolate pieces onto the marshmallow pieces to complete the s’mores. Wait several minutes for them to cool before eating. The longer you let them cool, the easier they are to peel from the parchment. My husband actually likes them after they’ve completely cooled–the marshmallows turn nice and crispy.
