Our local grocery store has an amazing version of classic Greek salad in their deli. I've been ordering it for years, so I figured I might as well recreate it with my own (healthier) recipe. I made a few healthy and calorie conscious substitutions, including adding yellow pepper instead of the more traditional red or green (Vitamin C) and reducing the amount of olive oil by about a third. I'm quite pleased with the results--it's a tangy, refreshing summer salad that's full of healthy veggies and fats.
