Deli Roll Ups

Recently, I was browsing a list of protein-packed snacks and discovered the idea of deli roll ups. The idea is simple: you roll up cheese, meat, and whatever else you’d like for a protein-heavy snack minus all the calories of bread and heavy condiments. It seemed like a great idea to me–after all, I love sandwiches and often miss them when I’m keeping my calories low. I simply can’t sacrifice so many calories to bread when it leaves me feeling empty and hungry. Deli roll ups are the perfect solution.

My version uses just a bit of dijon mustard for flavoring, but you could put whatever you like in the center. Other ideas I had included green onions, light majo, pickles, or olives. This mustard version is fantastic, though–I was surprised how great they taste given how low calorie they are. I’ve been having them for lunch all week. They store well, so I usually make them the night before and bring them to work in a sandwich bag.

Avocado and Cheese Mini Bagel

Between high school and college, I spent a year living in France as an exchange student. As you can imagine, the cuisine I got to experience there was one of my favorite parts of the whole experience. Cheese is considered an important part of most meals, and often my host families would have spreadable cheese instead of butter on bread–often eaten as dessert or as the final course of a meal. This is how I was introduced to Laughing Cow spreadable cheese, though in France it’s called “la vache qui rit” (literally “the cow who laughs”). If you’ve never tried it, it’s delicious.

Laughing Cow spreadable cheese comes in a light form, which is incredibly low calorie for how great it is. I often use it in place of mayo in various dishes. Given the high caloric load of avocado, I thought a great way to make avocado spread on toast might be to combine it with some Laughing Cow. I was right. It’s fabulous. If you’re a fan of avocado toast (who isn’t, right now?) I suggest you give this a shot. It adds a nice cheesy creaminess to the avocado spread. I don’t think I can go back to just eating plain avocado toast after trying this–it’s that good!
